Michelin Guide: “Brittany is a bit neglected”, according to chef Olivier Samson – The 2021 Michelin guide

“It’s always a lot of emotion that these star discounts. It brings me back to the first time I got it, in 2012: a moment that we won’t forget! I am very happy for the Moulin de Rosmadec, in Pont-Aven (29), which won its first star. For me, it was obvious that Sébastien Martinez is distinguished. This enshrines values, a skill, a daily job. I am also very happy for Jean-François Pantaléon, in Nantes (44) ”.

“I expected a few more stars for Brittany”

“Afterwards, I am appalled by the withdrawal of stars. In the context, we did not expect it. The Season, in Saint-Grégoire (35), it makes sense, because they have not been able to open since the takeover by Ronan Kervarrec. The Château de Locguénolé (56), idem: they are closed for renovations. But for Maxime Nouail (Domaine de Rochevilaine, in Billiers), I am very surprised. I immediately sent a message of support to our colleague. We are only men, but in the midst of covid, we don’t need that ”.

“I was also expecting a few more stars for Brittany. I have the feeling that we have been a bit neglected. I am thinking, among other things, of tables like Aux Sources, in Lorient, or that of Guillaume Pape, in Brest, who works hard. In these moments, one wonders what is missing. What is also missing to access the second star. Likewise, I ask myself the question: what would it take for Brittany to have a three-star restaurant? “

“Our best inspectors remain our customers”

“That said, it’s a very good thing that the guide maintains its stars in the covid context. It is a strong message for the profession. Of course, our best inspectors remain above all our customers. But appearing in the Bible is not neutral. I see it as a tribute to our suppliers who are more partners. I am always amazed when I see Rémi unloading his Saint-Jacques at Crouesty, or Marine and François, my market gardeners from Saint-Avé, with whom I have worked for more than ten years and who lived in a caravan at the bottom of the field when they first started. : they are people who have convictions, who work hard and give us the best ”.

“As for my godson, Arnaud Domette, from Kerstéphanie, in Sarzeau, which I sponsor as part of our association Tables et Saveurs de Bretagne, I said to him “patient and continue like this: one day it will come!” “”.
