In France, where 8 million people are food insecure, 10 million tons of food are thrown away every year. But initiatives are underway to limit food waste. In the heart of the Parisian business district of La Défense, the eco-responsible restaurant La Salle à Manger concocts inexpensive meals from leftovers from local caterers and unsold supermarket items. Meanwhile, “zero waste families” are trying to throw away no food, as a way to fight climate change. Finally, a Parisian baker recycles stale bread to create “green bread”.
