Diana Henry’s End of Summer Plum and Berry Pudding Recipe with Plum Gin

I like several versions of summer pudding, most of them boozy. When the plums are still in the stores and we slide into autumn, sloe or plum gin is perfect in a late summer pudding. You can also use blackcurrants, if you can still find them, and frozen berries (frozen blackberries and raspberries are great and much cheaper than fresh). You may find that your plums are so tart that you need to add a little more sugar.


Prep time: 30 minutes, plus chilling time and a day to chill

Cooking time: 45 minutes




  • 630g plums
  • 175 g of powdered sugar
  • 7 tablespoons plum gin, plus more if desired
  • 230g blackberries
  • 230g raspberries
  • 350g good quality thick sliced ​​white bread (thin foods will never hold together as they will be wet from the juice)
