Fans of Midwestern-style beer kids have strong opinions on how best to brew them. Some like to simmer the bratwurst in beer before browning them on the grill (as is the case here); some prefer to grill first, dip in beer afterwards. But everyone agrees that kids should start fresh and uncooked (rather than pre-cooked, like hot dogs), and then served on a toast with onions and lots of mustard. Purists can avoid adding ketchup, pickles, and sauerkraut to the sandwich, but when you’re the cook, you can choose which condiments to put or put aside.
